DIY Rainbow Popsicles

These cool treats aren't just pretty—they're packed with healthy ingredients you and your kids will love

These homemade rainbow popsicles will make taste buds go wild, thanks to each layer bursting with a different flavor!

Materials and Ingredients:

  • blender
  • popsicle molds
  • popsicle sticks
  • measuring cup
  • tablespoon
  • glass measuring cup (to pour)
  • coconut water
  • cubes of honeydew
  • frozen bananas
  • baby spinach
  • frozen pineapple
  • frozen mango
  • frozen strawberries
  • plain (or vanilla) greek yogurt
  • frozen blueberries

Instructions:
1. Make green layer: Half of a frozen banana, 1/2 cup honeydew, 3 baby spinach leaves, and 1/4 cup coconut water as needed to blend. Blend and pour into popsicle mold. Freeze at an angle for at least 30 minutes. For each of the following layers, also freeze while making the next layer.
2. Make yellow layer: Half of a frozen banana, 1/2 cup frozen pineapple, and coconut water as needed to blend.
3. Make orange layer: Half of a frozen banana, 1/2 cup frozen mango, and coconut water as needed to blend.
4. Make red layer: Half of a frozen banana, 1/2 cup frozen strawberry, 3 tbsp. plain Greek yogurt, and coconut water as needed to blend.
5. Make purple layer: Half of a frozen banana, ¼ c blueberries, 1 cup plain Greek yogurt, and coconut water as needed to blend. Fill the molds the rest of the way and freeze for about 2 hours.
