OCTOBER RECIPES

Jack O'Lantern Oranges Jack O'Lantern Pizzas Dippity Fruity Baked Apples

WEEK 1. JACK O'LANTERN ORANGES
Serve these frosty, refreshing Jack O'Lanterns during your October playgroup and share some Halloween fun and food with the kids.
Ages:
2 and up
Servings:
6
Ingredients:
  • 6 oranges
  • 6 cups orange juice
What to do:
  1. Cut the tops off the oranges with a knife, using a zigzag cut, to make the top of the Jack O'Lantern.
  2. Carefully squeeze out the juice and remove the pulp, keeping the orange intact.
  3. Rinse and dry the orange shells.
  4. Draw a Jack O'Lantern face on each orange shell, using a permanent black marker. Allow the marker to dry.
  5. Mix the juice from the oranges with more orange juice to make 6 cups.
  6. Pour the juice into the shells.
  7. Set the shells in the freezer for an hour or so, until partially frozen. (Or freeze until firm, then microwave to soften.)
  8. Remove from freezer and break up chunks with a fork to make slushies.
  9. Serve to the kids with spoons. Give them napkins to hold onto the orange shells, if they're cold.
  10. If you prefer, pour orange juice into the shells and serve with straws.

WEEK 2. JACK O'LANTERN PIZZAS
Make these quick-and-easy Jack O'Lantern Mini-Pizzas to serve at snack or lunch-time. Or, better yet, let the kids make their own!
Ages:
3 and up
(Under 2, give the kids toasted English muffins to nibble on.)
Servings:
6
Ingredients:
  • 6 English muffin halves
  • 6 tablespoons pizza sauce or tomato sauce
  • 6 American or cheddar cheese slices
  • Sliced olives
What to do:
  1. Lay out 6 muffin halves.
  2. Spread on pizza or tomato sauce.
  3. Trim cheese slices into circles to fit the muffins.
  4. Use olive slices for eyes, nose and mouth to make a face, (or cut up a variety of veggies for the kids to use for the faces).
  5. Heat muffin under the broiler until cheese is melted.
  6. Remove from broiler, allow to cool a few minutes, then serve to the kids.
  7. Have the kids name their creatures before eating them!

WEEK 3. DIPPITY FRUITY
Let the kids choose their favorite fruits to dip and eat for fun and flavor.
Ages:
2 and up
(Under 2, serve fruit cut into small pieces as a finger food)
Servings:
6
Ingredients:
  • Strawberries, orange wedges, bananas, pineapple, apples
  • 3 containers low-fat vanilla yogurt
What to do:
  1. Cut fruit into bite-size pieces (small enough so the kids won't choke on the bites).
  2. Place fruit pieces in separate bowls.
  3. Spoon yogurt into 6 individual bowls and distribute to kids.
  4. Give each child a small plate.
  5. Pass around fruit bowls. Let the kids pick out their favorite fruits and place them on their plates.
  6. When everyone is served, tell the kids to dip their fruits into their bowls of yogurt and gobble them up.

WEEK 4. BAKED APPLES
These simple, nutritious fall treats are perfect for little tummies at snack time.
Ages:
3 and up
(Age 2 to 3, omit walnuts and raisins to prevent choking)
(Under 2, serve applesauce)
Servings:
8
Ingredients:
  • 4 small baking apples
  • 2 tablespoons chopped walnuts
  • 2 tablespoons raisins
  • 1 teaspoon cinnamon
What to do:
  1. Cut apples in half and hollow out core.
  2. Place apples in a baking pan.
  3. Combine nuts, raisins, and cinnamon in a small bowl.
  4. Stuff mixture into apple hollows.
  5. Cover and bake at 350 degrees for 30 minutes.
  6. Allow to cool: serve warm, at room temperature, or chilled.
